Roasted Green Beans with Red Onion and Walnuts UNTRIED

Based on Roasted Green Beans.

INGREDIENTS:

1 lb. green beans, stems snapped off
1 Tbl olive oil
1 Tbl balsamic vinegar
1 tsp honey
1 tsp fresh thyme, minced
2 medium cloves garlic
1/2 medium red onion
1/2 tsp salt
1/3 cup toasted chopped walnuts
fresh ground pepper

PREPARATION:

1. Slice the garlic very thinly and place in small bowl. Chop and toast the walnuts; set aside.

2. Add balsamic vinegar, honey, and thyme to garlic. Set aside.

3. Oven rack to middle position; heat oven to 450. Line baking sheet with foil.

4. Slice the red onion (*half* of a red onion) into 1/2-inch thick wedges.

5. Place green beans and onion in wide-mouth bowl and drizzle with olive oil. Use hands or tongs to toss and coat evenly.

6. Spread green beans and onion evenly in a single layer on lined baking sheet and sprinkle with 1/2 tsp salt. Roast 10 min.

7. Remove from oven and use tongs to coat beans and onion evenly with honey/balsamic vinegar mixture. Redistribute evenly on baking sheet and continue roasting until onions and beans are dark golden brown in spots and beans have started to shrivel, about 10-12 min..

8. Adjust seasoning with salt and pepper, transfer to serving dish, top with walnuts, and serve.
