Marla Mendelsohn's noodle Kugel

NOTES:

This is a half recipe, which serves 10.

There are two other kugel recipes on this blog, one of which uses apples.


INGREDIENTS

1/2 lb. broad egg noodles
3-4 eggs
1/2 cup sugar
1-1/2 cups milk
1/2 lb. cottage cheese
1 cup sour cream
3/4 tsp vanilla
1/4 cup melted butter
white raisins (optional)
1 cup cornflakes
1/2 tsp sugar
1/2 tsp cinnamon


PREPARATION

Oven to 350.

1. Cook the noodles al dente. Drain and run under cool water. Set aside.

2. While the noodles are cooking, coarsely crush the cornflakes and mix with sugar and cinnamon. Set aside.

3. In a large bowl, mix the eggs, sugar, milk, cottage cheese, sour cream, vanilla, and melted butter.

4. Add the noodles and mix until evenly coated. The mixture will be loose.

5. Add raisins if you are using them.

6. Pour the noodle mix into a greased casserole dish.

7. Sprinkle the cornflake mixture onto the noodles.

8. Bake for 90 min.
