Spinach balls

From Sarah Marquardt


2 packages frozen spinach (10 oz each), thawed & squeezed dry
2 cups stuffing mix (I use Brownberry herb shredded stuffing mix)
Onions, finely chopped (sorry I don't have an amount here - I just go by sight - for one batch, probably one quite small onion)
4 eggs, beaten
1/2 cups parmesan or romano cheese
3/4 cups melted margarine (I reduced this from 1 cup in the original recipe - I use earth balance sticks [non-hydrogenated])
garlic powder to taste


Mix ingredients well, refrigerate 30 minutes

Form into balls.

Bake at 350 for 20-30 minutes, maybe until lightly browned
