2 packages frozen spinach (10 oz each), thawed & squeezed dry
2 cups stuffing mix (Brownberry herb shredded stuffing mix)
1 small finely chopped onion
4 eggs, beaten
1/2 cups parmesan cheese
3/4 cups melted butter
1-1.5 t garlic powder
2 t mushroom powder
Mix ingredients well, refrigerate 30 minutes.
Line one large cookie sheet with parchment paper.
Form into ~1T balls and place closely but evenly on the lined cookie sheet.
Bake at 350 for 20-30 minutes, maybe until lightly browned.
Makes about 30 spinach balls.
