ATK's Snow pea pods for two

This recipe is loosely taken from Cook's Illustrated and is based on their video

NOTES:

1. We didn't use lemon or parsley but DID use garlic and these came out tasty! The zest and parsley probably adds a touch of complexity to the overall flavor.

2. Amounts below are guesses, based on Liz's success with making these with very short notice and no time to watch the video and sort out the details (which there are none anyway).

3. If the snow pea pods and related ingredients are prepped ahead of time, this dish is easy to make as the final item before sitting down to eat, since it takes about 3-4 minutes to cook!


INGREDIENTS
about 1 Tbl of minced shallot, about the size of a large clove of garlic
1 clove garlic, minced.
2 pinches of sea salt
1 pinch of ground pepper
1/2 tsp of white granulated sugar
snow peapods for two people
about 2 tsp oil for the skillet


PREPARATION

Pull the "strings" that run like a seam along the side of the pods where the peas can be seen. Set aside.

Mince the shallot and mince the garlic, adding them together into a small bowl. (You might add a 1/4 tsp of oil and mix together.) Set aside.

In a small bowl, combine salt, pepper, and sugar.

Over high heat, in a 12-inch nonstick skillet (10 inch might be big enough if it's a small portion of pea pods), heat the oil until shimmering.

Put the pea pods in the skillet in a near-single layer, add the salt mixture, and let it all sit for about 30 secs.

Stir for 10 secs, add again let it sit for another 30 secs to develop some caramelization.

Then cook and stir for a 30-45 secs more, and move pea pods to the sides of the skillet. The pea pods should be a bright green, maybe with some browning going on.

In the center of the skillet, dump the shallot mixture and mash/stir it until fragrant, about 30 secs.

Toss the snow peas with the shallot mixture to combine and remove promptly.
