Easy bread crumbs


This recipe is "borrowed" from Cook's Illustrated's recipe for Oven-Fried Fish Sticks.


1. Adjust oven rack to middle position and heat oven to 400 degrees. 

2. For each 1/3 cup of bread crumbs, use one slice of high quality bread.

3. Tear the bread and put into food processor. 

4. Pulse several times to coarse crumbs. 

5. Bake bread crumbs on rimmed baking sheet, for 3-4 minutes, then stir.

6. Continue baking until golden, either just 2-3 min if the bread crumbs will be used on a dish that requires additional baking, or 4-5 minutes if they will be added later to a cold dish.   

**These burn easily so keep an eye on them after the first 2-3 minutes.
