Peanut Butter Kiss Cookie 2


This recipe is on BigOven.com here.  There is an alternate version on this blog, which blends a couple different recipes.

NOTES

1. Be sure the butter is softened ahead of time.
2. Grease the cookie sheets or use parchment paper. (The alternate recipe doesn't require greasing the cookie sheets.)
3. Unsure if natural peanut butter will work with this recipe.
4. This recipe will make about twice as many cookies as the other one and will need two 11-oz bags of kisses.


INGREDIENTS

1 cup butter, softenend
1 cup sugar, plus a separate 2 Tbl (set aside)
1 cup packed brown sugar
2 eggs
1 cup creamy peanut butter
1 tsp vanilla
2-1/2 cups flour
1 tsp baking soda
1 tsp salt
2 Tbls sugar
1 bag Kisses


PREPARATION

1. In a large bowl, cream the butter, white sugar, and brown sugar.

2. Add eggs and combine.

3. Add peanut butter and vanilla.

4. Add dry ingredients and stir until well blended.

5. In a rimmed plate or dish, place the remaining 2 Tbl of sugar.

6. Oven to 375 degrees. Grease cookie sheets or prepare with parchment paper.

7. Measure out (rounded) tablespoonfuls of dough and roll into balls. 

8. Roll cookies in sugar. 

9. Place one Hershey Kiss in the middle of each cookie, pressing down slightly. 

10. Place 3 inches apart on lightly greased cookie sheets.

11. Bake at 375 degrees for 8-10 minutes until set, but not hard.  Do not overbake. 

12. Leave on sheets for 2 minutes before removing to cool fully. Store in covered containers.
