Citrus sugar (lemon sugar; orange sugar)


1. Zest into a small or medium bowl one lemon or orange per cup or two of sugar. (Zest can be frozen until you need it.)

2. Mix in sugar until the concentration is to your liking.

3. You may run the mixture through a food processor for a few pulses to grind the zest and sugar together.

4. If you have time, dry out the sugar mixture before storing in an air tight container.
