Basic Vinaigrette:

3 Tbsp EVOO
2 Tbsp vinegar (white, cider, wine, NOT balsamic, see below)
black pepper

Basic Balsamic

3 Tbsp EVOO
1 Tbsp balsamic
1/2 tsp minced garlic
Pinch of seasoning (Italian, sandwich, other to your liking
1 tsp apple juice if adding to salad with fruit or if you prefer a sweeter vinaigrette

I got most of this from here, and that site includes other variations. But these are tried and true by me.
