Brigadeiros from Proper Tasty

This is a slight variation from the recipe that a friend of ours gave us.  This version requires 2 hours of refrigeration before forming chocolate goo into balls.

NOTES

1. While stirring the mixture, look for thickening, glossy texture.
2. Prepare buttered plate--and room in the fridge--ahead of time.
3. Use a scale, set to grams, to measure ingredients.  Non-metric measurements are very approximate!

INGREDIENTS

1 can of sweetened condensed milk (397g/400g)
30g butter (approx. 2 Tbl; plus more for greasing)
40g Cocoa Powder (maybe 1/2 cup?)
Sprinkles of various sorts (to decorate)


PREPARATION

1. Butter a dinner plate and set aside.

2. In a small saucepan on medium-low heat (err on the side of low), stir ingredients together.

3. Stir continually for 10-15 minutes, until mixture begins to thicken and get glossy. Be sure to scrape the entire bottom as you stir especially as it gets past the 10 minute mark.

4. Continue to stir, listening for "smacks" of air bubbles popping, and watching for how a ribbon of exposed pot as you scrape the spoon across its bottom is *very slow* to be covered up by the thickening goo.

5. Remove from heat and stir another minute to begin to cool it more evenly.  Then quickly and with a heavy spatula, turn it out onto the buttered plate, spreading it as evenly as possible.

6. Refrigerate for 2 hours, then use your hands to roll cooled dough into balls.  If necessary, cover hands with butter or oil to help with this part.

7. Roll balls into sprinkles, nonpareils, etc.
