Turkey meatloaf (can also be made with beef)
Makes 8 servings. We revised this recipe in 2024, some 15 years after we first started making it.
1-1/2 lb. ground turkey* or beef
*with turkey, use more liquid, such as OJ, and cook for a shorter time
We also discovered that using sweet and sour sauce, like what Leean Chin provides, makes for a nice substitute for the honey for the topping.
If reheating leftovers, or to have a sauce when serving, heat in a small saucepan on the stove some additional chili sauce and honey, along with a small bit of yellow mustard.
DRY INGREDIENTS
1 cup soft bread crumbs
1/2 tsp salt
1/8 tsp pepper
WET INGREDIENTS
1/3 cup ketchup
1/4 cup sweet onion, chopped
1 egg slightly beaten
1/4 cup or less of OJ if using turkey
optional: 2-3 tsp of dried thyme, to be added with wet ingredients
optional: 1-2 tsp of mushroom powder, to be added with wet ingredients
TOPPING
1/4 cup Heinz chili sauce
1/4 cup honey or crushed pineapple, drained
NOTE: Also use these ingredients to make a sauce if you wish, in addition to the topping.
PREPARATION:
Use 8 x 4 x 1-1/2" pan
If using a traditional pan, be sure to grease it ahead of time. You can also make a sling out of aluminum foil but still spray it with oil.
Oven to 350.
1. Combine dry ingredients in small bowl. Set aside.
2. Combine wet ingredients in small bowl, including the dried thyme and mushroom powder in order to rehydrate them, if using. Set aside.
3. Place ground meat in large, wide-mouthed bowl. Add wet ingredients and mix in gently.
4. Add dry ingredients and mix in gently.
5. Form into loaf. Place in pan. Bake at 350, uncovered, for 40 min.
6. While loaf is baking, combine topping ingredients and/or make the sauce (see Notes).
7. Spoon some over loaf after 40 min. and bake another 30 min. For turkey, cook until 180 internal temp: topping will be dark and sides will have pulled away from pan.
