Fettucini Alfredo (EASY)
Liz found this video, which helped underscore how easy a recipe it is (minus the shallots if time is really an issue). The video is for two; the recipe below is for one.
Serves 1
INGREDIENTS
Pasta
1-2 Tbl butter
1 clove garlic
1/2 cup cream or less
1/4-1/2 cup shredded parmesan
Salt and pepper
PREPARATION
1. Boil pasta in salted water (add 1 Tbl oil)
2. 1-2 Tbl butter in saucepan; heated on med until foamy
3. Add 1 clove minced garlic to butter and stir til fragrant, about a min
4. Add salt and pepper
5. Add 1/2 cup cream and about 1 handful shredded parmesan, stirring continuously for 2-4 min until slightly thickened
6. Pour cream mixture over pasta; add more Parmesan as needed
