Easy pancakes
Based on a recipe from the book How To Cook Everything.
NOTES:
2 eggs instead of 1 might add greater depth to the pancakes.
Vanilla is an addition
Choc chips are optional
Warming the milk will help the butter integrate
INGREDIENTS:
2 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp sugar
2 eggs (1 egg is okay)
1-1/2 cups milk, with extra to thin batter as needed
2 Tbl butter
1 tsp vanilla
PREPARATION:
1. Preheat large skillet or griddle over medium-low heat.
2. Melt the butter and set aside.
3. In a large bowl, combine all dry ingredients.
4. Loosely beat the eggs and set aside.
5. Gently warm 1-1/2 cups of milk (microwave power 4 for 40-45 secs?). Be sure not to boil it!
6. In medium bowl, whisk together milk, eggs, vanilla, and butter.
7. Use a large spoon to stir the wet ingredients gently into the dry ones, just enough to moisten the flour mixture. A few lumps are okay.
8. If using chocolate chips, mix in 1-2 handfuls.
9. Add milk to thin the batter to desired consistency.
10. Increase heat to medium, wait half a minute or so, and place a medium amount of batter on the cooking surface.
11. Flip when small bubbles start to appear, and allow to cook for another half minute until lightly browned.
