Watermelon Gazpacho



I found it on all recipes and I changed it by adding cantaloupe, using pear juice instead of orange, using a red pepper for color variety, and leaving out cilantro. 

2 C 1/4" diced watermelon
2 C pear juice
2 Tbsp EVOO
2 C diced cantaloupe 
1 seedless or seeded cucumber, diced
1 small red pepper, seeded and diced
1 small sweet onion, diced
2 cloves garlic, minced
1 small jalapeƱo, seeded and diced
3 Tbsp lime juice
2 Tbsp minced fresh parsley

  1. Process 1/2 cup of watermelon, along with the pear juice and oil, in a blender or food processor until pureed. Transfer to a medium bowl, along with remaining ingredients. Season with salt and pepper to taste. Refrigerate until ready to serve. (Can be made several hours before serving.)
