Turkey Gravy NEW

On the most recent (11/2017) episode of ATK, they had an interesting way to do gravy. From the Outsmarting Thanksgiving episode.

Ingredients

Small onion, minced
Small carrot, sliced thin
5 sprigs parsley
2 bay leaves
5 T flour
3.25 C water
1/4 C white wine


Strain the drippings from the roast turkey and put them in a fat separator for 10 minutes. Keep the drippings on the bottom for later.

Use 3 T fat in a 2-qt saucepan, and heat over medium high. Brown the neck and giblets and remove from the pan.

Turn down to medium heat and add the onion, carrot, parsley, and bay leaves. Cook for 5-7 minutes until softened.

Add flour to veggies, stir to coat the flour with fat.

Add drippings slowly (in the video, it looked like they had like 1-1.5 C drippings), getting rid of lumps as you go.

Add the water slowly to thin out the paste. Add the wine and return the neck and giblets to the pot.

Bring the mixture up to a simmer (it looks like he turned up the heat) for about ten minutes. It should thicken up a lot and reduce quite a bit.

Remove the neck & giblets, and strain the gravy.

Salt and pepper to taste. Serve hot.
