ATK's version of Most Dangerous Chocolate Cake


This recipe is formally called Coffee Mug Molten Chocolate Cake for Two and is adapted from Cook's Country of America's Test Kitchen.

It's also similar to the World's Most Dangerous Chocolate Cake: it's made quickly, in the microwave, and has a rich chocolate flavor. That's why it's dangerous!


INGREDIENTS

4 Tbl unsalted butter
2 ounces bittersweet chocolate, divided into individual ounces
1/4 cup sugar (1-3/4 oz)
2 large eggs
2 Tbl unsweetened cocoa powder (Dutch-processed cocoa worked fine)
1 tsp vanilla
1/4 tsp salt
1/4 cup flour (1-1/4 oz)
1/2 tsp baking powder
2 large coffee mugs, each about 11 oz (1-1/2 cups)
optional: vanilla ice cream


PREPARATION

1. Coarsely chop one ounce of chocolate; set aside.  For the other ounce, break it into 4 small pieces; set aside.

2. In a small bowl, combine sugar, cocoa, and salt; set aside.

3. In a separate bowl, combine flour and baking powder; set aside.

4. In a large microwave-safe bowl, combine the butter and the chopped chocolate and microwave it on a fairly high setting for about a minute, stirring every 20 seconds or so until melted, about a minute.

5. Whisk in sugar mixture and then add eggs and vanilla until combined.

6. Whisk or stir in flour mixture until combined.

7. Divide batter evenly between the mugs and place on opposite sides of the turntable in the microwave.

8. Microwave at half power for 45 secs. and then give the batter in each mug a quick stir to help it cook evenly.

9. Cook at half power for another 45 secs. and then add half of the broken chocolate into each mug, pressing the pieces a bit into the warm, soft batter. Be sure the chocolate is below the top of the batter by about 1/4"-1/2"

10. Cook at half power for about 35 secs until the cake is slightly wet around the edges of the mug and a bit drier toward the center.

11. Top with ice cream and eat right out of the mug!
