Watermelon Mint Lemonade


Ingredients

5C seedless watermelon in 1" cubes
1/2 C lemon juice (abt. 4 lemons)
1/2 C baker's sugar (fine sugar)
1/2 C water
1/4 C loosely packed spearmint leaves
Cold water

Place spearmint in the water (use a glass measuring cup) and refrigerate for several hours or overnight.

Juice the lemons to get 1/2 C of lemon juice. Refrigerate.

Muddle the mint in the water and remove the leaves. Add the sugar and microwave until just barely boiling, stir until the sugar is dissolved. Return the simple sugar to the refrigerator to cool while you prepare the rest of the ingredients.

Pulse the watermelon in the blender until smooth. You may need to do this in batches. Strain watermelon puree through a fine mesh strainer.

Put the pureed watermelon, lemon juice, and simple sugar (to taste, add more if the watermelon isn't very sweet) into a pitcher. Add cold water to taste. Serve over ice.
