Almond Granola


Edited from ATK (you need an account to see the recipe). Makes about 9 C. My carb count (without dried fruit): 26.6g. Consider adding some Keto friendly nuts, and reconsider the sugar content.

Notes

Consider adding 2 tbsp orange zest to the wet ingredients to add orange flavor.

Ingredients

1/6 C maple syrup
1/6 C honey
1/3 C packed light brown sugar
4 tsp vanilla extract, plus an extra splash
1/2 tsp salt
between 1/3 C and 1/2 oil
5 C old-fashioned rolled oats
2 C sliced almonds, plus an extra small handful

Instructions

1. Move rack in oven to upper middle position. Preheat oven to 325. Line a rimmed baking sheet with parchment.

2. Mix together oats and almonds in a medium bowl. Set aside.

3. In a large bowl, whisk together the maple syrup, honey, brown sugar, vanilla and salt until combined.

4. Whisk in oil until combined.

5. Fold in the oat/nut mixture until all the oats and nuts are coated well.

6. Transfer oat mixture onto prepared baking sheet and spread across sheet into thin, even layer (about 3/8 inch thick). Using stiff metal spatula, compress oat mixture until very compact.

7. Bake 45 minutes, more if it's not quite brown yet. Turn off oven and leave the pan in for another 10 minutes or so. Remove from oven and cool, in pan, on a wire rack for an hour.

8. Break the granola into the desired size and store in an air-tight container for up to two weeks.
