Cloud Bread (KETO)


Ingredients

4 large eggs
1/2 t cream of tartar
pinch of kosher salt
2 oz cream cheese, softened

Optional ingredients

For pizza bread: 1 T Italian seasoning, 2T shredded mozzarella, 2t tomato pasted, added to the yolk mixture before blending the meringue with the yolks



Preheat oven to 300 on convection baking. Line a large cookie sheet with parchment.

Separate yokes from egg whites.

Whip egg whites, salt, and cream of tartar to REALLY stiff peaks.

Beat cream cheese until softened, and add salt then yolks one at a time until combined and smooth.

Gently fold yolk mixture into meringue.

Place 1/4 C portions on the baking sheets, and spread into 4" circles, leaving room between each.

Bake until golden, 15-18 minutes.

Optional: sprinkle with cheese and bake 2-3 more minutes. Watch closely, they burn easily.
