Roasted Green Beans and Carrots with Balsamic Vinegar


Based on this easy recipe online.

NOTES:
Plan for 1/4 lb of vegetables per person.
Similar recipes add red onion.


INGREDIENTS are for 2 people but can easily be expanded.

1/4 lb carrots
1/4 lb green beans
1 medium clove garlic
approx 1 Tbl extra virgin olive oil
approx 1 Tbl balsamic vinegar
salt and pepper to taste
(optional) chopped red onion
(optional) fresh minced parsley


PREPARATION: 

1. Preheat the oven to 400

2. Peel and slice the carrot into sticks about the size of the green beans you are using.

3. Drizzle olive oil over them, toss to coat, and place in shallow dish large enough to hold all the vegetables you will be using.

4. Roast carrots for 15 minutes and begin preparing other items.

5. Trim the green beans and mince the garlic, placing both in a bowl large enough to hold all the vegetables. (Add red onion, if using)

6. After the carrots have been roasting for 15 minutes, add them to the bowl of vegetables, drizzle the olive oil over them, add salt and pepper, and toss to combine.

7. Place all vegetables onto original roasting dish and roast for 15 minutes, tossing them halfway through.

8. Remove the vegetables and drizzle balsamic vinegar over them; then return to oven for final 5 minutes.

9. Place vegetables in serving dish, add fresh minced parsley if you wish, and serve.
