Baked French Fries

Adapted from the New York Times Cooking recipe.

I used the Florida Pepper from Penzy's, and only estimated the salt and pepper.

Ingredients

1.5 lbs russet potatoes
4T olive oil
1/2 t salt
1/2 t pepper

Instructions

Place the baking sheet on the lowest rack in the oven and set it to 500.

Wash and cut the potatoes. Cut the potatoes into 1/4" to 1/2" thick sticks.

Toss the potatoes in the oil, salt and pepper.

When the oven is to temperature, add parchment to the baking sheet, add the potatoes and any salt/pepper and oil in the bowl. 

Bake for 15 minutes. Toss the potatoes, reduce the oven to 425 and bake for another 10 to 15 minutes.

Salt to taste.
