Ted Lasso's Biscuits #1

 

The recipe is from a TikTok video: "deliciously buttery, only five ingredients." And in  case we forget, Ted Lasso was a TV show that gained popularity during the Covid pandemic, perhaps because of the lead character's good nature, innocence, and belief in humanity.

The Today Show published Apple TV's "official" version of the recipe, which calls for confectioner's sugar and coarse salt. That recipe is published elsewhere on this blog.


INGREDIENTS

2 sticks of unsalted butter, softened
2 cups all purpose flour
1/2 cup sugar
1/2 tsp fine sea salt
1 tsp vanilla


PREPARATION

1. Preheat oven to 350.

2. In a bowl for a standing mixer (paddle attachment), combine all ingredients and mix on low for about 45 seconds, just until it comes together.

3. Make a sling with parchment paper for a square (8"x8") baking dish.

4. Press dough into pan with hands and fingers until an even layer is formed.

5. Bake for 30-35 minutes until golden brown around edges (see photo below) and then cool in the pan for an hour.

6. Cut into rectangles (and place in pink boxes for the Ted Lasso effect) before serving.
