World's Most Dangerous Popovers

NOTES

1. We call this "dangerous" because the popovers require only 4 basic ingredients, 1 bowl, a couple of coffee mugs, and a hot oven. Popovers in 45 minutes! 

2. This recipe is from a friend of Liz's from her Wisconsin days, Tim M. He riffed off of a very simple popover recipe like this one and used glazed mugs (don't use painted mugs) instead of a popover tin. 

3. Another alternative would be to use a muffin tin and space out the batter so no two wells are adjacent to each other. 

4. All ingredients are to be at room temperature. 

5. Both King Arthur and Cooks Illustrated/ATK have slightly more complicated recipes. 

6. Honey butter: 4 T softened unsalted butter, 2 T honey, 1/4 t salt, combined with the back of a spoon.


INGREDIENTS (half amounts are in parentheses) 

1 cup flour (1/2 cup) 
1 cup milk, heated gently in microwave if from fridge (1/2 cup) 
2 eggs, placed in bowl that has warm water if from fridge (1 egg) 
1/2 tsp salt (1/4 tsp) 
butter and flour to grease tins/mugs 


PREPARATION 

1. Preheat the oven to 450°, place rack in center of oven, and remove any racks that are above it. 

2. Whisk ingredients together until most lumps of flour are integrated.

3. Grease and flour six wells of muffin tins (3 wells). For popover/muffin tin, fill the wells halfway. For large mugs, 1/3 full was plenty; for small mugs, maybe fill halfway, but that's a guess.

4. Place muffin tin/mugs on a tray in the hot oven and bake for 20 minutes at 450.

5. After 20 mins and leaving the oven closed, turn the oven down to 350° and continue to bake for 20 mins more.

6. Remove hot popovers right away from mugs/tins by gently twisting them out, being careful of the hot steam.

7. Enjoy with honey butter or plain.
