Angry Trout Red Wine Vinaigrette

I swear Angry Trout has the BEST salads in the world. And the best grilled whitefish in the world. Salads always include really fresh fruit. Salad: lettuce, shredded carrots and beets, sliced red onions, sliced whole cucumbers, and sliced cherry tomatoes. Drizzled with this vinaigrette, this salad is heavenly.


Ingredients

1 C EVOO
1/2 C red wine vinegar
1 T freshly squeezed lime juice
1/2 t sugar
1/2 t Dijon mustard
1/2 t dried or 1 T fresh basil
1/2 t dried thyme
1 t chopped fresh chives
2 T minced fresh parsley

Makes 1 1/2 C of dressing
