Foolproof Hollandaise

From ATK (need a membership to see the original recipe). I halved it here because it's just for me.

Comments on their website say it's easy to halve/double, and that it stores well in the fridge. The instructions as written were different in the video. The instructions say to put the eggs and butter in a bowl and integrate them over a pot of barely boiling water, THEN add the boiling water. But the video showed them doing it at the same time. Place the bowl over the double boiler with the butter and egg yolks. Stir and then immediately start to slowly add the boiling water. The butter wasn't melted in the video.

Ingredients

6 T butter, softened
3 large egg yolks
1/4 C boiling water
2 t lemon juice
pinch of cayenne 

Instructions

Bring a double boiler up to a very light simmer.

Add the butter and egg yolks to the double boiler and slowly start adding the 1/4 C boiling water and whisk constantly until the sauce reaches 160F, about 7-10 minutes.

Off heat, stir in lemon juice and cayenne. Season with salt to taste.
