Apple Bread


NOTES

Based on this recipe from AllRecipes.com. We enjoy the apple bread from the local farmers market so much, we went looking for a recipe to make.

Reviews said that two cups of sugar made the bread too sweet and reduced the sugar to only one cup.

Reminders for weights:
1 cup sugar = 200g
1 cup flour = 120g
1 cup liquid = 237 ml

INGREDIENTS

1 to 2 cups white sugar (400g), or swap out half the granulated sugar with brown sugar (according to reviews)
2 large eggs
1/2 cup vegetable oil
2 tsp vanilla extract
2-3 medium Honeycrisp apples, peeled and diced
2 cups all-purpose flour
1-1/2 tsp salt
1 tsp baking powder
1/2 teaspoon ground cinnamon, or more to taste


PREPARATION

1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan or make a sling from parchment.

2. In a medium bowl, mix flour, salt, baking powder, and cinnamon. Set aside.

3. Peel and dice the apples so you have two cups.

4. In a large bowl, beat sugar, eggs, vegetable oil, and vanilla extract in a mixing bowl.

5. Stir in the diced apples; then add the flour mixture, stirring until evenly combined.

6. Pour batter into the prepared loaf pan.

7. Bake at 350 for 45 minutes, then cover loaf pan with aluminum foil.

8. Continue baking until a toothpick inserted into the center comes out clean, about 15 to 30 minutes more.

9. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.
