Caesar Salad Dressing
A recipe Floyd Frye on TikTok. He makes meat and croutons, but this is just the dressing part. The history is interesting--it was from a restaurant in Tijuana by a man whose last name was Caesar who went there because of prohibition in the US. Tijuana became a popular destination for Californians who wanted to have a drink with dinner.
Ingredients
4-5 flat anchovies, minced
2 cloves of garlic, minced
2 egg yolks
1/4 C olive oil
3/4 C shredded parmesan
1/2 T dijon
1 T Worcestershire sauce
Juice of 1/2 lemon
Salt and pepper to taste
Instructions
1. Chop the anchovies and garlic together until it's a paste.
2. Using an immersion blender, blend the olive oil and egg yolks until creamy and smooth.
3. Add the anchovies/garlic paste to the egg mixture with the remaining ingredients.
4. Refrigerate before serving on romaine lettuce, top with croutons and a few shaves of parmesan.
