Trader Joe’s Elote Corn Dip DRAFT
https://modernbites.com/trader-joes-elote-dip-recipe-copycat/#how-to-make-trader-joes-elote-corn-dip A note on anything other than freshly cooked/roasted corn on the cob: If using canned corn, make sure the corn is drained thoroughly before adding to the dip. If using frozen corn, thaw the corn (you can do this in the microwave or by running the corn under warm water), and drain it before adding to the dip. INGREDIENTS 1 cup whole milk Greek yogurt 1/3 cup yellow corn *see note for canned/frozen 1 teaspoon lime juiced 1 teaspoon chili powder 1/2 teaspoon garlic powder 1/2 teaspoon ground chipotle pepper 1/4 teaspoon salt 1/4 teaspoon black pepper 1/2 cup cotija cheese finely crumbled 1/4 teaspoon cumin 2 tablespoons fresh cilantro or parsley PREPARATION In a mixing bowl, add the yogurt, corn, lime juice, chili powder, chipotle pepper, salt and black pepper, cheddar, and cumin. With a wooden spoon, mix well to combine, until all ingredients are well-incorporated into this creamy dip. Add in the cilantro and stir again. Give it a taste test, and add additional salt (or lime) if desired. Serve with corn chips (I like TJ’s organic corn chip dippers), tortilla chips, chopped vegetables, or crackers.
