Roasted thyme potatoes

INGREDIENTS
1 pkg of fresh thyme, about 3/4 oz.
3 lbs of small potatoes (red potatoes, fingerlings, etc.)
1/3 cup olive oil
3 Tbl kosher salt
1 tsp pepper
2 tsp garlic powder

PREPARATION
Oven to 350.

1. Chop thyme after removing stems.

2. Wash potatoes and cut into quarters. Place in large bowl and toss with olive oil.

3. Add salt, pepper, garlic powder, and half of the thyme.

4. Cook at 350 until golden brown.

5. Sprinkle with remaining thyme and serve.
