Lemon Grilled Chicken

NOTES:
Needs 30 or more minutes (or overnight) for marinade.
Can be made on grill, griddle, or broiler.
INGREDIENTS
1 lemon
2 Tbl olive oil
1 clove garlic
parsley
1/4 tsp dried thyme
1/4 tsp dried marjoram
1/4 tsp salt
1/4 tsp pepper
4 (6-oz) skinless, boneless chicken breasts
Sprigs of parsley for garnish
PREPARATION
1. Combine the thyme, marjoram, salt, and pepper into a small dish. Set aside.
2. Work with the whole lemon:
4. Add the chicken breasts to the bowl and spoon the marinade over the chicken until well coated. Cover bowl with plastic wrap and chill for 30 min or overnight.
5. Preheat griddle, grill, or broiler to medium. Put chicken onto cooking service. Use the leftover marinade to brush onto chicken as it cooks, about 2-3 times.
6. Cook until cooked through, about 10 min. each side. Sprinkle with lemon strips.

- Using a peeler, remove strips of lemon zest from half of the lemon. Trim the zest into fine strips with a sharp knife. Set aside. These strips will be used as a garnish.
- Grate the other half of the lemon to make 1 Tbl zest. Put zest into large bowl.
- Squeeze the juice from the lemon into the large bowl with the zest.
4. Add the chicken breasts to the bowl and spoon the marinade over the chicken until well coated. Cover bowl with plastic wrap and chill for 30 min or overnight.
