Sun-Dried Tomato, Basil and Mozerella Scones

2 1/2 cups flour, 4 tsp baking powder, 3 tsp salt (more or less), 2 beaten eggs, 3/4 cup cream, 1/3 cup butter (cut into smallish chunks), chopped basil (6-10 leaves) or dried basil (1 Tbsp), 2 or 3 Tbsp sundried tomato (chop into smaller pieces), 1/4 cup shredded mozzarella cheese.

Combine dry ingredients in largish bowl, use a pastry knif to cut in the butter until mixture resembles coarse pebbles. Make a well in the center of the mixture and set aside. Combine all other ingredients, and pour (some) into the well. Using a fork, stir mixture and add more fluid until just moistened. Turn the dough mix out onto a lightly-floured surface and knead 10-12 times. Pat dough into an 8" round and cut into 8 wedges.

Place wedges on an ungreased baking sheet and bake for 12-14 minutes in a pre-heated 400 degree oven.

There... brushing the tops with the remaining cream/egg mix and sprinkling more dried basil on top would be one way to fancy it up.
