Chocolate Fudge Pie

    This is the cake-pie that Alan always asked Mom to make for his birthday. Alan told me he uses shortening instead of butter...
INGREDIENTS

4 oz unsweetened chocolate
1/2 cup butter (1 stick), presumably at room temp or softened
2 cups sugar
2 Tbsp vanilla
2/3 cup sifted flour
4 eggs, yolks and whites separated
1 cup whipped cream
10-inch pie plate

PREPARATION

Oven to 325.

1. Sift the flour and separate the egg yolks from the egg whites.

2. Melt chocolate.

3. Cream the butter, then add the sugar a little at a time. Mix well.

4. Add melted chocolate, vanilla and flour.

5. Slightly beat the egg yolks and add them to mixture.

6. In a separate bowl, beat the egg whites until they hold their peaks. Then fold the whites into the mixture until no patches of white are seen.

7. Pour into 10" pie plate. Bake at 325, 50-55 min.

8. When cool, store in refrigerator. Center will fall; scoop out 1/4" and replace with whipped cream. Refrigerate remaining uneaten pie.
