Flourless chocolate hazelnut tort

From Sally Wright, who says "[These are] only the essential ingredients; the amounts are flexible."

Requires a 9" spring-form pan.


INGREDIENTS

9-12 oz baking chocolate (semisweet or bittersweet; NOT unsweetened)
3/4 cup butter
6 egg yolks
6 egg whites
1/2 cup sugar
1 tsp vanilla
1 cup finely ground hazelnuts (might require 2 cups of hazelnuts)


PREPARATION

Oven to 350

1. Chop and grind hazelnuts.

2. Melt chocolate and butter in the microwave. (Probably should check it every 30 secs or so to make sure it doesn't go beyond melting.)

3. In a large bowl, add sugar to egg yolks and beat together for 3 minutes.

4. Add 1 tsp vanilla and ground hazelnuts to egg mixture.

5. Add the chocolate mixture to the egg mixture.

6. Beat the egg whites and fold them into the egg and chocolate mixture.

7. Bake ~50 minutes in a greased 9" springform pan at 350
