Banana Pancakes


Notes: Eyeball adding the flour until the batter is the right consistency. Use the crepe flipper. Use a handmixer for this recipe

Ingredients

2 very ripe bananas, medium
4 eggs
3/4-1 C flour
pinch salt
1 tsp baking powder
1/2 tsp baking soda
Abt. 1/2 T butter, barely melted & cooled a bit

Instructions

Peel bananas into a large mixing bowl. Starting on low, use the handheld mixer to begin mashing the bananas, increasing the speed until the bananas are a relatively smooth liquid (a few very small bits is okay).

Add eggs, beat well on medium until combined.

Add melted & cooled butter. Mix until combined

Whisk 1/2 C flour, salt, baking powder & baking soda together.

Slowly add that flour mixture to the banana & egg mixture and add the remaining flour until the batter is the right consistency. A few small lumps of flour is okay.

Preheat the pan. This gives the flour a chance to rest and return back to its glutinous state.

Use gravy ladle to create half dollar pancakes in the pan. Cook over medium/medium low heat until lightly browned on both sides, flipping to the second side of the pancake when there are bubbles on pancake.

Don't bother setting the table. Just eat them right there on the counter.
