Earl Grey Yogurt Cake

Ingredients

1 C Vegetable Oil, plus more for pan
2 C (250g) all-purpose flour
1 1/2 tsp kosher salt
1/2 tsp baking powder
1/2 tsp baking soda
2 large eggs
1 1/4 C granulated sugar
1 C plain whole milk yogurt
3 T loose-leaf Earl Grey tea or 1/4 C from bags
2 tsp vanilla extract
1 T raw or granulated sugar for topping

Instructions

1. Oven to 325. Lightly coat a 9x5 or 8 1/2 x 4 1/2 loaf pan with vegetable oil and line with parchment paper, leaving overhang on long sides. Coat parchment with more oil. 

2.  Whisk the flour, salt, baking powder, and baking soda in a medium bowl to combine.

3. Vigorously whisk the eggs and sugar in a large bowl for one minute (seriously, time it!); whisk in the yogurt, tea, and vanilla extract. 

4. Gradually stream in the 1 C of vegetable oil, whisking constantly until incorporated.

5. Add dry ingredients and whisk to combine.

6. Scrape batter into prepared pan and smooth the top.

7. Sprinkle evenly with the last tablespoon of sugar. Bake until a skewer or toothpick inserted into the center comes out clean, about 1 hour.

8. Cool for 15 minutes in the pan, then run a butter knife or offset spatula between the cake and pan to release. Lift it out using the parchment overhang and transfer to a wire rack.
