Spinach Rolls


Notes:

Instructions are from Jonathan Nicholas (ne Jonathan Bahls) and are sketchy about a number of things. When making for the first time, make notes about how much to butter the bread, how long for the rise, etc. Consider adding garlic. I added the untried tag because I haven't made it in a long time, but I've definitely made them.

Ingredients

1 pkg frozen spinach
3/4 C Monterey Jack Cheese
1 small onion
1 egg
1/4 C plus 2 T grated Parmesan
1 loaf of bread dough (1 lb frozen from grocery store or freshly made)
Butter

Instructions

1. Oven to 375

2. Thaw dough if it's frozen. Prep dough if making fresh.

3. Thaw and drain the spinach.

3. Mince onion.

5. Mix the spinach, Monterey Jack cheese, onion, and egg.

6. Grease a 9x13 pan and coat with 2 T of parmesan.

3. Roll out dough to 12"x16"

8. Spread mixture on the dough.

9. Roll up. Cut in slices.

10. Place slices in the 9x13" pan, laid flat. Cover and let rise.

11. Melt butter and brush onto the risen rolls. Sprinkle 1/4 C Parmesan over the rolls.

12. Bake for 25 minutes.

Serve warm.
