Pete's Healthy Lemon Chicken


Our friend Pete gave us this recipe. It's flavorful and easy.
Amounts for a half recipe for two are in parentheses.
Leftover chicken can be used for a lovely chicken salad too.

INGREDIENTS:

4 boneless skinless chicken breasts (2)
2 Tbl butter (1-1/2 to 2 Tbl; or use olive oil)
1/3 cup chicken broth (3 Tbl)
4 Tbl fresh lemon juice (2 Tbl)
1 Tbl honey (1-1/2 tsp)
2 tsp or 4 small cloves minced garlic (1 tsp or 2 cloves)
1 tsp Italian seasoning (1/2 tsp)
1/4 tsp pepper to taste (1/8 tsp)
(optional) 1 tsp salt (1/4 to 1/2 tsp)
(optional) fresh rosemary; lemon slices for garnish


PREPARATION:

1. Oven to 400; grease a baking sheet or casserole dish.

2. In a large skillet over medium-high heat, melt butter/heat up olive oil.

3. Add chicken and cook 2-3 mins on each side just until browned.

4. Transfer chicken to prepared baking sheet.

5. In a small bowl, whisk together the broth, lemon juice, honey, garlic, Italian seasoning, salt, and pepper.

6. Pour sauce over chicken and bake 20-30 mins. While chicken is baking, every 5-10 mins spoon the sauce over the chicken.

7. Chicken temp should be 165. Garnish with rosemary and lemon slices if using.
