Pete's chocolate cake
This cake was moist and chocolatey!
Salt is optional; egg can be substituted with Egg Beaters.
INGREDIENTS:
1 cup all purpose flour
1 cup sugar
3 Tbls unsweetened cocoa
1 tsp baking soda
(optional) 1/4 tsp salt
1 cup low-fat sour cream
1 egg - or - 1/4 cup Egg Beaters
For powdered topping:
2 Tbls powdered sugar
1 tsp cinnamon
PREPARATION:
1. Oven to 350; if possible use a fat-free, alcohol-free cooking spray to great an 8x8 pan.
2. In a large bowl, mix dry ingredients. Set aside.
3. In a small bowl, mix sour cream and egg.
4. Pour wet ingredients into dry and mix well.
5. Pour batter into prepared baking dish, spread evenly.
6. Bake 30-35 mins and then cool on a rack.
7. While cake is cooling, mix together the powdered sugar and cinnamon.
8. When cake is cool (or barely warm?), sift mixture over cake. Eventually the mixture will melt, forming a thin and tasty crust.
