Marinated Chicken Tenders

NOTES

1. This was very flavorful and easy.

2. Lemon garnish and parsley are optional.

3. If using a pre-made chicken rub, omit the 3/4 tsp of salt.

4. Use a large skillet or a griddle. No need to use more oil when cooking the chicken! 


INGREDIENTS

1 lb chicken tenders for 4 servings
1/4 cup olive oil
2 Tbl lemon juice
2 tsp of seasoning (chicken rub is great!)
1 clove of garlic, minced
3/4 tsp salt (*see Notes)
1/4 tsp pepper
1 Tbl fresh parsley, chopped
lemon wedges


PREPARATION

1. For the marinade, place chicken in large bowl and add olive oil, seasoning, garlic, lemon juice, salt (if using) and pepper.

2. Stir to coat chicken evenly and marinate from 20 mins to 8 hours in the fridge.

3. Preheat pan or griddle to medium high and cook for 3-4 mins on each side until cooked through.

4. Serve hot, garnish with lemon wedges and sprinkle with parsley.
