Turkey Wing Gravy

It's the pandemic of 2020. The election of 2020. I joined TikTok, mostly for comfort. These folks give me life. Funny things about the Oval Office Trash Fire. Queer youth and older people coming out. Lesbians finding each other. Hello #breadtok. And cooking. 

I found, made, and modified a recipe for make-ahead gravy that can be frozen. Here it is. 

Brining Ingredients

2 large turkey wings 
6 C apple cider 
5/8 C kosher salt 

Brining Instructions 

24 hours before you want to make the gravy, mix the cider and kosher salt until the salt is dissolved, and brine the turkey wings in a bowl in the fridge. 

Roasting Ingredients 

2 celery ribs, quartered 
3 small-ish carrots, quartered 
1 yellow onion, cut in half 
1 garlic bulb, cut in half 
6 sprigs fresh thyme 
1 C white wine 1 box chicken stock 
EVOO 
Pepper 
Poultry/Pork Rub from Lunds 

Roasting Instructions 

1. Place celery, carrots, onion, garlic, and time in a roasting pan. Drizzle with EVOO and sprinkle liberally with the poultry rub. 

2. Drain the wings and rinse well to get as much salt off the skin as possible. Place the wings in the roasting pan. Sprinkle liberally with the poultry rub and pepper. 

3. Bake at 400 (375 on convection) for 1 hour. 

4. Turn over the chicken wings. Add the wine and chicken stock to the roasting pan and return to the oven. Bake for 45 minutes or until the liquid reduces to about half. Let cool for half an hour. 

Additional Gravy Ingredients 

2 sprigs thyme 
Oil 
1 T flour 
Pepper 

Gravy Instructions 

1. Drain the liquid into the fat separator. Let rest until the fat rises to the top, about 10-15 minutes. 

2. Place about 1 T fat into a pan and reheat, boiling off any liquid that may have gotten into the fat. 

3. When it's hot, add the flour and stir. Cook until the flour is toasted, turning dark tan in color. 

4. Slowly add the rendered stock and stir to prevent lumps. Continue adding stock until you've used up the remaining stock. Add the thyme and stir for a few minutes as the gravy reduces then remove thyme. Add spices to taste. 

5. Cool and freeze.
