Amore "herbed" tomato sauce


This recipe is based on one from Amore, whose tomato paste in a tube we use a lot. Our recipe below omits olives.

No fresh herbs are used in this recipe, although "herb paste" is. (The pictured tomato paste isn't used in this recipe but the garlic paste is.)

The recipe serves 4.


INGREDIENTS

3 medium tomatoes (maybe use diced tomatoes?)   
1/2 cup jarred roasted peppers
1 Tbl Amore garlic paste
1 Tbl Amore herb paste
1/3 cup olive oil
1 lb pasta shells
8 oz fresh mozzarella
salt and pepper
(optional) 1/2 cup chopped and pitted Kalamata olives


PREPARATION

1. Cut tomatoes into bite-size pieces; set aside.

2. Cut the peppers into bite-size pieces; set aside.

3. In a large serving bowl, put the tomatoes, peppers, garlic paste, and herb paste (and olives, if using) and stir in the olive oil. 

4. Add salt and pepper to taste.

5. Prepare pasta as directed on its packaging.

6. While the pasta cooks, cut the fresh mozzarella into 1/2" pieces; set aside.

7. Drain and toss with prepared sauce.

8. Top with mozzarella and toss before serving.
