Baked Crunchy Chicken (edited)

Another TikTok recipe from My Butch Kitchen but significantly changed. It was a *terrible* recipe with too much of some things, and not enough of others. Honey bunches of oats was way, way too sweet to be the entire breading, so we added corn flakes. 

This recipe is excellent with sauces including mustard, ketchup, bbq sauce, sweet and sour. I'd like to try it with smaller pieces of meat to make it into dipping pieces.


INGREDIENTS

1 lb chicken tenders

Marinade:
1/2 C buttermilk
1/2 t cayenne
1/2 t pepper
1/2 t garlic powder 
1/2 t onion powder
1/4 t salt

1/4 t salt for the flour mixture
4 C crushed flake cereal (corn flakes, or something sweet if you prefer)
1 C flour
4 eggs


INSTRUCTIONS 

Preheat oven to 350.

Add tenders to the buttermilk and the spices and marinade for at least 30 minutes.

Add salt and pepper to the flour. Beat the eggs and add to another bowl. Measure crushed cereal to equal four full cups (more than four cups of whole cereal) and put it in a third bowl.

Place a well-oiled cooling rack in a cookie sheet that's lined with parchment. 

Remove one tender, let milk mixture drip off slightly and coat in flour, then in the egg, then in the cereal, using a two-hand method to reduce mixture of coatings on your hands. Place on
