Fancy Fish in Foil
Ingredients
Fish
1/2 tsp fresh thyme
1/4 tsp lemon zest plus lemon wedges for serving
1/4 tsp salt
Dash of pepper
2 6-ounce skinless cod fillets, 1 to 1 1/2" thick
2 tbsp unsalted butter, cut into individual tablespoons
Breadcrumbs
1/8 C panko
1/2 tsp olive oil
pinch of salt
Instructions
Oven rack to middle position, oven to 450.
Cut two large pieces of aluminum foil
Add thyme, zest, salt, and pepper and stir to combine.
Place one fillet on the side of each piece of foil.
Sprinkle thyme mixture evenly over fillets and top with a pad of butter each.
Fold empty side of foil over cod, fold edges of foil together and pinch to seal.
Transfer packets to baking sheet. Bake until fish registers 140, 12-15 minutes.
While fish is baking, stir together panko bread crumbs, extra-virgin olive oil, and pinch salt. Cook in microwave for 1 minute. Stir mixture and continue to cook in microwave until panko is golden brown, 30 seconds to 1 minute longer. Sprinkle over your baked Fancy Fish in Foil just before serving.
