ATK's Tomato Relish & Pete's Tomato Chutney


1.  ATK's Tomato Relish                     

This recipe is from the cookbook Foolproof Fish, by America's Test Kitchen. It's similar to our friend Pete's chutney, below, but doesn't need long to marinate. 
 
Makes about 1 cup, for 4 servings of 1/4 cup. 








INGREDIENTS

2 tomatoes, cored, seeded, and cut into 1/4" pieces
1 small shallot, minced
1 garlic clove, minced
2 Tbl fresh basil, chopped
1 Tbl extra virgin olive oil
1 tsp red wine vinegar


PREPARATION

Combine all ingredients in a bowl and let sit for 15 mins.
Season with salt and pepper before serving.

2. Pete's Tomato Chutney

This recipe is from our friend Pete, who says "This probably isn't any formal recipe."
Prepare this recipe well ahead of time.


INGREDIENTS

1 cup quartered cherry tomatoes
1/2 c finely diced red onion
1/4 c sweet red pepper, small dice
1 clove fresh garlic - tiny dice
leaves from two sprigs of fresh thyme
leaves from 1 sprig fresh oregano
1-2 Tbl extra virgin olive oil
scant amt of salt
few grinds of black pepper
Optional: small spritz of lemon


PREPARATION

Mix all above in a medium bowl and refrigerate for 6 hours before serving.
Optional: puree with an immersion blender for a less chunky chutney.
