Cinnamon Apple Pie Bread by Brown Family Farm

 

NOTES

1. We made this according to the directions from the farmer but it needed about twice as long to bake! Maybe make it in a pie plate or square dish so it isn't as deep...? This recipe is found online at several websites, so it's unclear who the original baker is.

2. The original recipe had the cinnamon and brown sugar added on top of the chopped apples, and then swirled into the apples and batter either with your finger or with the handle of a wooden spoon. We worried that the cinnamon and sugar wouldn't get blended the way we like it and adapted the recipe accordingly.

3. Although the batter was tasty, the long bake time that ultimately was needed seemed to have dried out the bread too much, and the flavor was a bit bland. We're not sure if we'd make this again, without adding bigger flavor and figuring out how best to bake it.

INGREDIENTS 

1/3 cup light brown sugar, not packed
1 tsp cinnamon
2/3 cup granulated sugar
1/2 cup *salted* butter, softened (8 Tbl)
2 eggs
1-1/2 tsp vanilla
1-1/2 c flour
1-3/4 tsp baking powder
1/2 cup milk
4 apples peeled and chopped 


PREPARATION

1. Oven to 350

2. Grease and flour a 9x5 loaf pan

3. Mix brown sugar and cinnamon together in a small bowl; set aside.

4. Combine flour and baking powder in another bowl (if using unsalted butter, add 1/8 tsp salt as well); set aside.

5. Peel and chop the apples into 1/4” or 1/2” pieces. Set aside (if likely to brown, stir in some lemon juice).

6. Beat the granulated sugar and softened butter together in a bowl using an electric mixer until smooth and creamy.

7. Beat eggs in one at a time until incorporated.

8. Add vanilla until incorporated. 

9. Add flour mixture into creamed mixture about 1/2 cup at a time. As the mixture thickens, you may need to switch to stirring by hand until ready for the next step.

10. Mix milk into batter until smooth.

(Optional: At this time, you can mix together the apples and brown sugar mixture and split it in half.)

11. Pour half of batter into prepared loaf pan, smoothing it out with a spatula, followed by half of apples (or apple mixture) and half of cinnamon and brown sugar mixture.

12. Lightly pat/push apple mixture into batter, top with remaining batter, and layer with remaining apples and sugar mixture.

13. Swirl brown sugar mixture through apples using a spoon.

14. Bake for 30-40 mins* until the center doesn't jiggle and a toothpick comes out clean from center of loaf. If getting too brown on top, loosely cover with foil until done. *Our first time making this in the loaf pan took more than 75 minutes! 

15. Probably serve warm and with vanilla ice cream.
