Creamy Crockpot Chicken for Two


NOTES

2. Uses a 4 quart or 6 quart crockpot


INGREDIENTS

2 boneless skinless chicken breasts (1/2 lb each or smaller)
1 chicken bullion cube
1 tsp salt-free poultry seasoning (or your favorite seasoning salt)
1/4 tsp freshly ground black pepper
1-1/2 cups chicken broth (or 1 15-oz can)
2 Tbl unsalted butter 1/2 cup milk 2 Tbl cornstarch


PREPARATION

1. Place chicken breasts in the bottom of the slow cooker.

2. Sprinkle the poultry seasoning, salt and pepper on top and pour the chicken broth around the sides. It might not completely cover the chicken. 

3. Add the chicken bullion cube. 

4. Cut the butter into 4 pieces, and place 2 on top of each breast.

5. Place the lid on the slow cooker, and set it to HIGH for 3 hours. 

6. A few minutes before the cooking time is complete, whisk the cornstarch into the cold milk and set aside. and then stir it into the still-hot crockpot. 

7. When the full 3 hours is done, remove the chicken from the slow cooker and shred with two forks.

8. Stir the milk mixture into the still-hot crockpot and then add the chicken back in; place the lid back on; and cook on LOW for 30 minutes. After 30 minutes, it will be slightly thickened and ready to serve.
