Everyday Butter Cake
From Buttermilk by Sam, rewritten for our preferred way to cook. I saw it on TikTok.
To make this a chocolate cake, reduce the cake flour to 200g (1.75C) and add 1/2 C dutch process cocoa, and 2 more T of sour cream.
It's not clear about how long to let the cake cool before cutting. We let it cool, in the pan, for about half an hour.
Uses a 9x9 baking pan.
Ingredients
226g or 1 cup unsalted butter cold is fine
220g or 1 cup granulated sugar for the cake ingredients
1 tsp fine sea salt
1 tablespoon pure vanilla extract
3 large eggs
180g or ¾ cup sour cream
250g or 2 cups cake flour sifted
¼ cup powdered sugar
2 teaspoons baking powder
3 T granulated sugar for the top
Instructions
1. Oven to 350 F. Grease and flour a 9” square or round cake pan.
2. In a small bowl, combine the salt and granulated sugar. Sift the flour, powdered sugar, and baking powder into another bowl.
3. Place the butter in a large glass measuring cup and microwave it until it’s almost but not completely melted. Pour it into a large bowl (bigger than our large glass one).
4. Add the sugar & salt and whisk very well, a full 30 seconds.
5. Add the vanilla and whisk for another 30 seconds.
6. Add the eggs then whisk for a full minute, until it’s light and creamy, then whisk in the sour cream.
7. Sift in the cake flour, powdered sugar and baking powder.
8. Fold the batter until it’s smooth. Pour into the prepared pan.
9. Sprinkle with an additional 3 tablespoons of granulated sugar.
10. Bake for 30-45 minutes, until a cake tester comes out clean and the top is golden brown.
