Hot fudge sauce for 2


This recipe combines a simpler one from Baking Mischief with a more complex but richer recipe from America's Test Kitchen. A single batch makes enough for 2 people. The recipe probably could be doubled!

Optional ingredients of a sugar-based vanilla powder and dried vanilla beans can be found online.

INGREDIENTS

1-1/2 tsp dark chocolate chips or finely chopped dark chocolate
1 Tbl granulated sugar
1 Tbl Dutch cocoa powder
1 Tbl unsalted butter
2 Tbl heavy cream
pinch of salt
drizzle of golden syrup (light corn syrup is ok)
1/8 tsp vanilla extract; increase to 1/4 tsp if you don't have optional ingredients, below
Optional: one pinch vanilla sugar and one pinch dried vanilla beans

INSTRUCTIONS

1. In a small bowl, place the dark chocolate, sugar, and salt; then sift into the bowl the cocoa powder to break up lumps, stir in the optional ingredients if using, and set aside.

2. In a small saucepan, melt the butter over medium heat.

3. Whisk in cream; then whisk in the mixture of dry ingredients.

4. Whisk continuously, breaking up any lumps that may form, until mixture begins to thicken and bubble, about 2-3 minutes.

5. Remove from heat, continue whisking for about 30 seconds to cool the sauce slightly, then whisk in the vanilla.

6. Allow to sit and thicken for 2 to 3 minutes. Use immediately and refrigerate any remaining sauce. Reheat the sauce in the microwave.
