Fried Rice

Made and something was off so did some research. Next time, use peanut oil. Also, I updated some quantities and added mushrooms. I added three mushrooms but I think it could use more. Some recipes use toasted sesame oil as a finishing touch, as well as oyster sauce. Consider these additions: carrots, chicken, tofu.

Ingredients

Three cups of cooked rice (about one cup dry)
4 eggs
4 green onions
1 t fresh grated ginger
4 garlic cloves
1/2 yellow onion
6 mushrooms
1/4 C oyster sauce
Peanut oil


Instructions

1. Cut up green onion, and separate the green from the white slices. Dice the yellow onion. Grate the ginger. Mince the garlic. Keep each ingredient separately because they're added at different times.

2. Separate the egg yolks from the whites.

3. Coat the rice with the egg yolks, breaking up clumps.

3. Add oil to a pan and heat it up to smoking Beat the egg whites with a pinch of salt and a little bit of oil and cook it in the pan. Set the cooked egg whites aside.

4. Wipe out the pan and add oil. When it dances, add the ginger, which doesn't burn easily, and the mushrooms.

5. When that's fragrant, add the onions and the scallion greens. When that's fragrant, add the rice.

6. Add a touch of sugar, garlic, and the whites of the scallions. Add the oyster sauce as you mix the garlic and scallions to the rice. Sauté until toasted well.

7. Cut up the egg whites and add to just heated.

8. Serve!
