Homemade Ground Beef

Sirloin steak tips

Instructions

Slice sirloin steak tips into half inch pieces. 

Lay in a single layer on a sheet pan and freeze until firm but pliable (15-25 minutes).

Working in batches, process the beef in a food processor until coarsely ground. Be sure to stop to evenly distribute the cubes so they're evenly chopped.

Inspect the ground meat and remove any long strands of gristle, or any large chunks of hard meat or fat.

Drizzle on melted butter for added richness. Use a fork to fluff the meat. Without lifting or compressing, form the beef into patties with rough edges and a textured surface.
