Strawberry butter
with warm-from-the-oven popovers, pancakes, Swedish pancakes, toast, etc
- Whipped Strawberry Butter (can be doubled)
In the bowl of a stand mixer fitted with the paddle attachment, whip 1 stick of softened butter with 1/3 cup mashed strawberries that have been drained (not "strawberries, mashed") and 1-1/2 to 2 Tbl powdered sugar until the ingredients are well blended, about 3 minutes. Cover and refrigerate it for later use, or use immediately.
